Ingredients:

Directions:

  1. Bring 1 3/4 cups water to a boil.
  2. Add 1 tsp. curry powder and 1/4 cup raisins.
  3. Stir in 1 cup instant brown rice and cook according package directions.
  4. Top with 2 Tbsp. toasted pine nuts.
  5. NOTES....................More curry ideas.......
  6. For a stir-fry, sprinkle white meat chicken with curry powder and saute in a bit of oil with fresh basil.
  7. Add a half-tsp. to a box of couscous as it cooks.
  8. Fold a pinch curry, into a Tbsp. of low-fat mayonnaise for a spicy sandwich spread.
