Sweet and Sour Chicken Stir Fry

Ingredients:

Directions:

  1. Cook rice according to package directions
  2. Prep boneless skinless chicken breasts 1/2 inch cubes
  3. Chop vegetables into bite size pieces
  4. Prepare sauce
  5. 1/4 cup chicken broth,2 Tbsp soy sauce,2 Tbsp cider, balsamic vinegar,1 Tbsp brown sugar,1/2 tsp hot red pepper flakes,Combine all in a 1-cup measuring cup.
  6. Mince 1 Tbsp each of fresh garlic and ginger root.
  7. Heat pan, add 1 Tbsp of olive oil, then the chicken to the pan. Stir-fry until well-browned and cooked through, about 2 to 3 minutes.
  8. Add the minced garlic and ginger
  9. Add broccoli and carrots stir-frying for a few minutes, add the mushrooms, snow peas, and green onion and continue to stir-fry until all vegetables are tender-crisp, 1 to 2 minute longer.
  10. Stir in your flavoring sauce, make sure all the ingredients are well coated with the sauce.
  11. Then serve the stir-fry immediately over rice.
