Ingredients:

Directions:

  1. Preheat oven to 350 degrees F and spray 8x8 pan with cooking oil.
  2. Brown and drain ground beef.
  3. Pour 1/2 jar of salsa into beef and warm through.
  4. Warm tortillas in microwave or in skillet on stove.
  5. Fill tortillas with meat/salsa mixture and fold tightly.
  6. Place in baking pan side by side.
  7. Pour remaining salsa over enchiladas and spread to cover.
  8. Sprinkle with cheese.
  9. Bake in preheated oven for 20 minutes, covered, then uncover and bake an additional 10 minutes.
  10. Serve with sour cream or refried beans.
  11. Enjoy!
