Summer Tomato and Cucumber Salad

  1. In a large bowl, combine all dressing ingredients EXCEPT olive oil.
  2. While wisking the mixture, stream in olive oil slowly, creating an imulsion.
  3. Add tomatoes and cucumbers and mix.
  4. Refreigerate 1 hour before serving.
