Sugar Free Banana Prune Bread

Ingredients:

  • 2 heaping tbsp prune lekvar or prune puree
  • 2 cups flour , may be part whole wheat
  • 3/4 to 1 cup splenda for baking
  • 1/2 tsp baking powder
  • 1 egg
  • 1/4 cup buttermilk ( i used skim milk with a tsp vinegar )
  • 2 tsp vanilla

Directions:

  1. Mash bananans and prunes
  2. Sift dry ingredients together
  3. Combine wet ingredients together
  4. Beat all mixtures on med speed with an electric mixer till well blended
  5. Place in a paper lined greased loaf pan
  6. Bake in a 350F oven for 35 to 45 minutes OR tested done in center with toothpick
  7. Cool and remove from pan
  8. Wrap in foil overnight to mellow flavors- may be frozen See Photo
