Ingredients:

  • 1 cup wild rice
  • 3 tbsp butter
  • 1/2 cup chopped onion
  • 1 tsp salt
  • 1 tsp thyme
  • 1/2 tsp marjoram
  • 8 slices bacon

Directions:

  1. Cook and drain rice.
  2. Saute onion in butter.
  3. Mix with rice, almonds, salt and herbs.
  4. Salt and pepper hens and stuff with rice mixture.
  5. Put a strip of bacon over each hen.
  6. Cook, uncovered, for 1 1/2 to 2 hours at 325, basting occasionally with drippings.
