Strawberry Glazed Sour Cream Cake

Ingredients:

  • 1 cup sugar
  • 1/4 cup sour cream
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/4 tsp salt
  • 1/3 cup milk
  • 1 tbsp cornstarch

Directions:

  1. Heat oven to 350°.
  2. Combine butter and sugar in large bowl.
  3. Beat at medium speed, scraping bowl often, until creamy.
  4. Add egg whites and continue beating until light and fluffy.
  5. Stir in sour cream and vanilla.
  6. Reduce speed to low; add flour, baking powder, salt and milk.
  7. Beat just until combined.
  8. Spread batter into greased and floured 8 square baking pan.
  9. Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean.
  10. Cool completely.
  11. Meanwhile, combine strawberries and cornstarch in a saucepan.
  12. Cook over medium heat, stirring occasionally, until mixture boils and thickens, about 4 to 5 minutes.
  13. Cool 15 minutes.
  14. Spoon strawberry mixture onto cake, spreading evenly.
  15. Cover and refrigerate until chilled for at least 2 hours.
  16. Serve with whipped cream, if desired.
