Sticky Pork Ribs

Ingredients:

  • 3 lb pork ribs
  • 1 bulb garlic
  • 1 bulb garlic
  • 1 oz cornflour
  • 1 tbsp spn dark soy sauce
  • oil for deep frying

Directions:

  1. Cut ribs only enough to fit into sauce pan
  2. Roughly chop garlic
  3. Add 5spice and stock cube
  4. Place all in pan
  5. Cover with cold water
  6. Bring to a boil, simmer 20 mins.
  7. Remove ribs from liquid (keep stock for soup)
  8. Peel and grate garlic and ginger,sprinkle over hot ribs
  9. Place rest of ingredients in large bowl & mix well
  10. Cut pork ribs into pieces with 2 bones if large or 4 bones if small
  11. Place ribs in marinade & leave for minimum of 2 hours
  12. (overnight is best)
  13. Drain ribs in colander retaining as much marinade as poss on them
  14. Carefully heat groundnut or rapeseed oil in a large wok
  15. With a pair of tongs carefully add a few pieces at a time
  16. Fry until piping hot and slightly browned
  17. The marinade can be reused once more, or cooked as a sauce (dilute with a little stock)
  18. With the addition of more garlic and ginger plus some chopped green chilli cookout some of the marinade, add diced cooked duck meat and spring onion, place in the bottom of a soup bowl
  19. Pour over ricenoodles cooked in the pork stock, cover with stock and serve for a hearty main course or starter soup, or even with the ribs!.
