Steak, Egg And Asparagus Sandwich

Ingredients:

  • 6 oz cooked steak (i used leftover grilled ribeye)
  • 2 tsp butter
  • 2 large eggs
  • 2 slices american cheese
  • s &p to ta te

Directions:

  1. You'll probably need two pans to make this work
  2. First, thinly slice the steak and set aside
  3. Julienne the asparagus spears (cut the in half, and then slice them the long way into strips)
  4. Butter the insides of the rolls and grill them in a frying pan at medium high heat
  5. Once they're done, set them on a plate and add about a tablespoon of butter to the pan and toss the steak and asparagus in together See Photo
  6. In a separate, nonstick pan, cook two eggs sunny side up, or over easy. You want a soft yolk for this recipe
  7. To serve, stack the steak on the bottom half of the roll, then a slice of American cheese, followed by the asparagus and topped with the egg See Photo.
  8. S&P to taste
  9. Cut the sandwich down the center and allow the yolk to coat it all. See Photo
