Spinach Veggie And Feta  Quiche

Ingredients:

Directions:

  1. Preheat oven to 375
  2. Melt butter in olive oil, in a large skillet, over meduim heat
  3. Saute green onion, garlic and roasted pepper for 3-5 minutes, until tender
  4. Add mushrooms
  5. Cook 1-2 minutes
  6. Add spinach and warm through, stirring to combine
  7. Add pinch of salt and pepper
  8. Add feta and mix well.
  9. Remove from heat and let cool.
  10. Meanwhile, in mixing bowl, whisk together eggs, yolks, milk and small pinch of salt and pepper
  11. Once cooled, spoon and press spinach mixture into thawed pie crust
  12. Pour egg mixture, slowly over and into spinach mixture, stirring gently to incorporate
  13. Top with handful of parmesan cheese
  14. Bake at 375 for 1 hour, until top is slightly brown and eggs are cooked through.
  15. Enjoy!
