Spinach, Pine Nut, and Apple Salad

Ingredients:

  • 2 bunches spinach
  • 2 tbsp olive oil
  • 1/4 cup pine nuts
  • 1/4 cup apples
  • 3 tbsp shallots
  • 1/4 tsp salt

Directions:

  1. Wash and dry spinach.
  2. Heat oil in sauté pan over medium heat.
  3. Cook pine nuts, apple and shallots in oil about 5 minutes stirring occasionally.
  4. Stir salt into mixture then gradually add spinach and toss just until spinach is wilted.
  5. Serve immediately.
