Spinach Crepes

Ingredients:

Directions:

  1. Blend crepe ingredients in a blender or food processor for 5 seconds.
  2. Scrape down sides and blend the batter for 20 seconds longer.
  3. Cover and let stand at least 30 minutes.
  4. Heat 8-inch nonstick skillet over medium heat.
  5. Brush with melted butter then stir batter.
  6. Pour 3 tablespoons butter into pan and quickly tip to coat bottom.
  7. Cook until bottom is slightly browned, about 45 seconds.
  8. Turn crepe with spatula and cook 20 seconds longer.
  9. Transfer to a plate then repeat with remaining batter.
  10. Brush pan with a little melted butter before cooking each crepe.
  11. FILLING:
  12. Reserve 1/2 cup cheddar cheese.
  13. Combine remaining ingredients then place 1/2 cup into each crepe.
  14. Roll up then place seam side down in greased baking dish.
  15. Pour tomato sauce on top then sprinkle with reserved cheese.
  16. Bake at 375 for 25 minutes.
