Spinach Baked with Three Cheeses

Ingredients:

Directions:

  1. Preheat oven to 350^F.
  2. Butter an 11x7x2 inch baking dish.
  3. Combine the first 7 ingredients in a large bowl and set aside.
  4. In a large pot, heat the oil over medium heat.
  5. Add the spinach and saute about 3 minutes, until wilted and juices evaporate.
  6. Drain well.
  7. Arrange spinach over the bottom of the prepared dish.
  8. Sprinkle with the cheese mixture and bake until heated through, about 20 minutes.
  9. Preheat broiler and broil spinach dish until the cheese is golden brown on top, watching closely so not to burn, about 2 minutes.
