Spinach And Apple Salad With Warm Bacon Vinaigrett...

Directions:

  1. Cook bacon in a skillet over medium-low heat, turning slices occasionally until crisp and browned. 8-10 minutes.
  2. Drain on paper towel-lined plate and keep warm.
  3. Measure the fat in pan. (There should be 2-3 T.) Add enough oil to equal 5 T of total fat in the pan.
  4. Whisk the vinegar, mustard, garlic, salt and pepper into the fat in pan. Keep warm.
  5. In a large bowl, combine the spinach and apple.
  6. Spoon the warm bacon mixture over the spinach and apple. Toss to coat.
  7. Divide among 4 plates.
  8. Crumble the bacon over spinach and top with the cheese.
