Spicy Roasted Vegetable & Black Bean Soup

Ingredients:

  • 1 cup carrots
  • 1 cup parsnips
  • 1 cup leeks
  • 3 cloves garlic
  • 1 3/4 cups black beans, cooked , no salt added
  • 1 cup potatoes
  • 4 cups water
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp pepper, black
  • 1/4 tsp curry powder

Directions:

  1. Cut the vegetables into bite size chunks and toss with the olive oil, then season with salt, pepper and curry powder. Leave the garlic cloves whole
  2. Spray a baking sheet with non stick spray and spread the vegetables out in a single layer
  3. Roast in a preheated 375 f degree oven for 15 minutes, stirring every 5 minutes. They should be softened and lightly browned on the edges.
  4. Once cooked, find and mash the garlic cloves.
  5. Put everything into a pot with the black beans and add the water to cover to 2 over the top of the contents.
  6. Simmer for about 10 minutes to combine the flavors.
