Spicy Roasted Vegetable & Black Bean Soup

A light yet filling and nutritious soup that requires no long cooking time.
Ingredients:
1 cup carrots
1 cup parsnips
1 cup leeks
2 stalks celery
3 cloves garlic
1 3/4 cups black beans, cooked, no salt added
1 cup potatoes
4 cups water
1 tbs olive oil
1/4 tsp salt
1/4 tsp pepper, black
1/4 tsp curry powder
Directions:
1. cut the vegetables into bite size chunks and toss with the olive oil, then season with salt, pepper and curry powder. Leave the garlic cloves whole
2. Spray a baking sheet with non stick spray and spread the vegetables out in a single layer
3. Roast in a preheated 375 f degree oven for 15 minutes, stirring every 5 minutes. They should be softened and lightly browned on the edges.
4. Once cooked, find and mash the garlic cloves.
5. Put everything into a pot with the black beans and add the water to cover to 2 over the top of the contents.
6. Simmer for about 10 minutes to combine the flavors.
