Spicy Portuguese Spinach Soup

Ingredients:

Directions:

  1. Heat oil and add garlic and onion. Cook 3 minutes or until softened.
  2. Add stock, spinach, soy sauce, red pepper flakes, bay leaf and salt. Bring to the boil.
  3. Reduce heat to medium, add beans, and cook until the vegetables are tender, about 30 minutes. About 10 mins before serving, stir in parsley and marjoram. Remove and discard bay leaf to serve.
