  1. Heat oil and brown onion and garlic
  2. Add chili powder, cook for further min.
  3. Add vegetables and cook for a further 4 min.
  4. Stir in stock and peanut butter
  5. Season
  6. Bring to the boil
  7. Cover and simmer for 20 min.
  8. Check seasoning and serve
  9. Sprinkle with roast peanuts
