Spicy Peanut Soup

a hearty healthy veg n nut soup to go with a chunk of corn bread
Ingredients:
2 tbsp oil
1 large onion, finely chopped
2 garlic cloves, crushed
1tsp chilli powder
2 red bell peppers, de-seeded and finely chopped
225g – 8oz carrots, finely chopped
225g – 8oz potatoes, cubed (i very rarely peel potatoes)
3 sticks celery, sliced
1 1/2 pints veg stock
6 tbsp crunchy peanut butter
2/3 cup corn
salt and ground pepper to taste
roughly chopped roasted peanuts to garnish
Directions:
1. heat oil and brown onion and garlic
2. add chili powder, cook for further min.
3. add vegetables and cook for a further 4 min.
4. stir in stock and peanut butter
5. season
6. bring to the boil
7. cover and simmer for 20 min.
8. check seasoning and serve
9. sprinkle with roast peanuts
