Spiced Mixed Nuts

Ingredients:

  • 2 tbsp olive oil
  • 1/2 tsp ground ginger
  • 1/2 tsp curry powder
  • 2 tbsp sugar
  • 1 tbsp honey
  • 1/2 cup whole almond
  • 1/2 cup walnut halves
  • 1/2 cup pecan halves

Directions:

  1. Lightly oil a foil lined baking sheet.
  2. Heat the olive oil in a large nonstick skillet over medium heat and add the ginger, curry powder, and cayenne.
  3. Saute until fragrant, about 5 seconds.
  4. Stir in the sugar and honey.
  5. Then add the nuts.
  6. Stir until mixture is amber colored and nuts are coated well, about 6 minutes.
  7. Transfer the nuts to the prepared baking sheet.
  8. Separate the nuts as they cool.
  9. Sprinkle with salt.
  10. Store in an airtight container at room temperature.
