  1. Preheat oven to 375 F.
  2. Cream together the butter or oil, sugar, applesauce, eggs, orange juice, and vanilla.
  3. In another bowl, mix together the flour, baking powder, orange peel, and salt.
  4. Mix the dry ingredients into the liquid and combine gently.
  5. Fold in the blueberries.
  6. Bake in lightly oiled or sprayed muffin tins for 30 minutes, or until done.
