Ingredients:

Directions:

  1. Nuke potatoes in microwave 3 mins. stir and nuke another 3 mins
  2. Meanwhile, heat oil in skillet over med heat
  3. Add onions, garlic, and tortilla chips
  4. Saute 5- 10 minutes depending on how soft you want your chips(you may add more oil here)
  5. Add potatoes to skillet and cook 2 mins
  6. Beat eggs with milk and add spices and tomato
  7. Pour into skillet
  8. Gently scramble eggs
  9. Top with cilantro
