Chilaquiles Mexican Stove Top Casserole

Ingredients:

Directions:

  1. In a large nonstick saute pan Brown off lean ground beef along with the diced onion
  2. Add the tortilla squares to the mixture along with a little olive oil stir till tortillas are nice and hot and well mixed with the beef & onions
  3. Add the enchilada sauce
  4. ( here you can make the Chilaquiles one of two ways)
  5. Dry : just enough sauce to flavor the tortilla mixture
  6. Wet : enough sauce to make a creamy texture.
  7. Add olives,and cheese, mix together well,once cheese is melted
  8. Add Pico Pica sauce to taste
  9. Salt & pepper to taste
  10. Serve and top with some sour cream,cilantro and a squeeze of lime
