Ingredients:

Directions:

  1. Heat olive oil in a large skillet on medium high heat. Add the garlic and shallots; sauté for about 1 minute.
  2. Add spinach and tomato to the pan; stir with garlic mixture.
  3. Cover the pan and cook for an additional minute.
  4. Add balsamic vinegar. salt and pepper to taste.
  5. Sprinkle wih parmesan cheese.
  6. Serve immediately.
