Ingredients:

  • 2 cups of uncooked rice
  • 1/4 cup of vegetable oil
  • 4 cups of water or chicken broth (preferably the broth but will do)
  • 1/2 large onion
  • 1 large ripe tomato
  • 1/2 can of sweet corn
  • 1 tbsp of seasoning salt
  • 1 tbsp of garlic salt
  • 1 tbsp of ground cumin
  • 2 tbsp of tomato bullion
  • 1 tsp of sugar
  • 1/4 cup of chopped cilantro

Directions:

  1. 1) Mix all spices and rice in bowl
  2. 2) Dice onion and tomato
  3. 3) Heat oil in pan and cook onion until translucent
  4. 4) Add in rice and spices and cook for about a minute and a half stirring frequently
  5. 5) Add in tomato and corn and cook for another two minutes
  6. 6) Pour in the four cups of water or broth
  7. 7) Bring to a boil and reduce to a simmer and cover stirring occasionally for 20 minutes
  8. 8) Fluff and serve
