Soy and Vinegar Marinated Cornish Game Hens

Ingredients:

  • 2 (1 1/2 lb) baking hens, halved, backbones removed
  • 1/2 cup soy sauce
  • 1/2 cup cider vinegar
  • 1 1/2 tbsp garlic, minced
  • 1 1/2 tbsp dried oregano
  • salt , to taste
  • pepper , to taste

Directions:

  1. Marinate the hens in the above ingredients in the refrigerator for at least 2 hours to 12 hours.
  2. Turn hens occasionally.
  3. Preheat oven to 450 degrees F.
  4. Arrange hens skin side up in a 13 X 9 baking pan and pour marinade over the hens.
  5. Bake 20-25 minutes, or until done.
  6. Discard bay leaves and serve with rice.
