Ingredients:

  • 2 tbsp spoons diced jalapeno's (or favorite pepper)
  • 1/4 cup black beans
  • 1/4 cup corn
  • 3 tbsp spoons minced bell pepper
  • 1/2 tsp cumin
  • 1/2 tsp chilli pepper
  • a smattering chopped parsley

Directions:

  1. Saute bell pepper and onion in a skillet with some oil untill tender
  2. Add corn, beans, parsley, and jalapeno
  3. Mix in spices
  4. Cook untill warmed
  5. Add enough cheese to make it nice and gooey
  6. Remove from heat
  7. Take your tortilla's and a round cookie cutter
  8. Using the cookie cutter make circles from the tortilla
  9. Place on a greased oven pan and cook until crispy
  10. Place your southwestern mix on crisps and top with cheese
  11. Bake untill cheese is melted
