Ingredients:

  • 1/4 cup lemon juice
  • 1/4 tsp salt
  • 2 cups fresh strawberries or 2 cups fruit
  • 1 cup water
  • 1 1/2 cups whipped cream
  • 1/4 cup almonds , optional
  • 1/4 cup sugar

Directions:

  1. Slice strawberries.
  2. Bring water, sugar, lemon and salt to a boil.
  3. Stir in rice.
  4. Cover and remove from heat.
  5. Let stand 5 minutes.
  6. Uncover and stir and cool.
  7. Sprinkle fruit with sugar.
  8. Let stand.
  9. Drain fruit, measuring 1/4 cup juice.
  10. Add to rice along with fruit and nuts, if desired.
  11. Fold whipped cream into fruit and rice mixture.
  12. Chill in the refrigerator for 2- 3 hours.
