Smoked Mackerel and Potato Curry

Ingredients:

Directions:

  1. Cook the potatoes until tender, then halve.
  2. Flake the fish into large pieces.
  3. Dice the onion and saute gently until translucent.
  4. Grate the ginger and crush the garlic.
  5. Add to the onion for 1 minute.
  6. Add the spices and cook until the aromas are released- 30 seconds or so.
  7. Add the fish and potatoes and heat through.
  8. Season with salt and pepper and garnish with chopped fresh coriander.
