Simple Curried Chicken

Ingredients:

Directions:

  1. Take cooked barbeque chicken (from the supermarket is fine), remove skin and remove flesh from the bones.
  2. Cut the meat into bite size pieces.
  3. Heat oil in frying pan and once hot add the curry powder.
  4. Allow the heat to flavour up the curry powder before adding the chicken.
  5. Stir chicken around pan ensuring it is coated with the curry powder.
  6. Remove pan from the heat and add in coconut milk. Reduce heat so that the coconut milk doesn't separate (it shouldn't if you use a good quality milk and do not use coconut cream).
  7. Add frozen peas and corn and simmer for 10-15 minutes.
  8. Season with salt and more curry powder to taste and to get a nice yellow looking curry sauce.
  9. Serve on a bed of rice.
  10. Delicious and even better the next day for lunch.
