Sherry Sweet Potatoes With Pecans

Ingredients:

Directions:

  1. Boil sweet potatoes in salted water until tender then peel and cut into thick slices.
  2. Preheat oven to 350 then combine honey, orange juice, orange rind and sherry.
  3. Place a layer of sweet potatoes in a baking dish then cover it with some of the honey mixture.
  4. Sprinkle with pecans and repeat layers of potatoes, liquid and pecans until the casserole is filled.
  5. Pour remaining juice over top then sprinkle with nuts and dot with butter.
  6. Cover and bake 30 minutes or until juice has been absorbed by potatoes and top is browned.
