Ingredients:

Directions:

  1. Preheat the oven to 180°C.
  2. Coat a large pan with cooking spray and heat.
  3. Cook the onion and carrot until soft.
  4. Add the mince and brown.
  5. Stir through the garlic and flour and cook for 1 minute.
  6. Stir in the chopped tomatoes, stock and parsley.
  7. Cook for 20 minutes and season with salt and pepper.
  8. Meanwhile microwave or steam the sweet potato and potatoes until tender.
  9. Mash the cooked sweet potato and potatoes with a masher, adding the milk and butter.
  10. Spoon the meat mixture into a casserole dish.
  11. Spread the mashed sweet potato and potato on top.
  12. Sprinkle with the cheese and bake for 30 minutes or until heated through and golden on top.
