Semolina Pudding

Ingredients:

  • 500 ml milk
  • 60 g semolina
  • pinch ot nutmeg
  • put 200 g fresh fruit halved ( and stoned if necessary ) , 150 ml orange juice , 25 g caster sugar and 1 tsp nutmeg in a pan and simmer for 15 mins . cool slightly . and serve with the pudding .

Directions:

  1. Pre heat oven at 190 deg .
  2. Grease an oven proof serving dish .
  3. Boil the milk , orange rind and butter .
  4. Sprinkle the semolina and stir until it boils .
  5. Remove and add nutmeg , juice and atlast add the egg .
  6. Stir well .
  7. Pour into the dish and bake for 30 mins .
  8. Top with a knob of butter and serve with spiced fruits .
