Scalloped Sweet Spanish Onions

Ingredients:

Directions:

  1. Melt 1/4 cup butter in skillet.
  2. Add the onions and green pepper and cook until tender.
  3. Stir in pimiento.
  4. Place half of mixture in shallow greased baking dish. Sprinkle with 1/2 cup Swiss cheese and 1/2 cup cracker crumbs. Repeat layers of cheese and onions.
  5. Beat eggs with cream, salt and pepper. Add the minced garlic.
  6. Pour over onions in baking dish.
  7. Mix the remaining 1/2 cup cracker crumbs with remaining 2 tablespoons melted butter. Sprinkle over top of dish.
  8. Bake at 325 degrees for 25 minutes or until set. Serve hot.
