  1. Preheat oven to 350 degrees. spray a 9x13 glass or ceramic baking dish with nonstick cooking spray.
  2. In a large pot, melt the margarine over medium-high heat.
  3. Add the flour, stirring constantly.
  4. Add the onions, mayonnaise, salt and chicken stock. Stir until smooth. cook until sauce thickens.
  5. With a ladle, place a layer of the sauce into the bottom of the prepared pan. Spread a layer of overlapping potatoes.
  6. Layer sauce.
  7. Layer potatoes.
  8. Layer sauce.
  9. Sprinkle top with pepper and paprika.
  10. Bake uncovered for 1 1/2 hours or until golden.
