Savory Potato Waffles

Ingredients:

Directions:

  1. Put onion, parsley and potatoes into a large strainer or colander.
  2. Squeeze liquid from mixture using your hands then transfer mixture to a bowl.
  3. Add lemon juice and mix with a fork.
  4. Add egg yolks, oil, flour, baking powder, cinnamon, salt and pepper stirring to blend.
  5. Quickly fold in egg whites.
  6. Heat waffle iron and spread mixture evenly on iron and cook 10 minutes until golden. Serve waffles with sour cream and applesauce.
