Savorie’s Tomato Bisque Soup

Ingredients:

  • 1/3 cup butter
  • 3/4 tsp dill seed
  • 1 tsp dill weed
  • 1 tsp oregano
  • 1/4 cup honey
  • 1/4 cup flour
  • 1 (28 oz) can diced tomatoes
  • 1 1/2 tsp salt
  • 1/2 tsp white pepper

Directions:

  1. Sauté onion, dills, oregano in butter.
  2. Add flour, cook roux.
  3. Add tomatoes and (juice to equal stock amount) and stock.
  4. Salt & pepper.
  5. Bring to low boil.
  6. Reduce & simmer.
  7. Cook long enough to get rid of flour taste.
  8. Before serving, warm up the half & half and slowly add to hot mixture along with parsley and honey, low simmer (so it does not break to boil) and serve.
