Sautéed Catfish Fillets With Cajun Cream Sauce

Ingredients:

  • 2 lb fresh catfish fillets
  • 1/8 stick butter
  • 1/2 cup flour
  • 1/2 cup heavy cream
  • 1 1/2 tsp cajun seasoning
  • salt & pepper to taste

Directions:

  1. In large nonstick sauté pan, heat butter on medium-high until melted.
  2. Place the flour in a small bowl and flour/dust the catfish with flour.
  3. Place the dusted catfish into the sauté pan and let cook for 2-3 minutes and turn.
  4. Add heavy cream and stir in salt and pepper and Cajun seasoning.
  5. Reduce heat to low simmer and reduce sauce by half. This should take 3-5 minutes for the sauce to reduce by half. Remove and serve.
