Sausage Bean Chowder

Ingredients:

  • 1/2 lb pork sausage
  • 1 (16 oz) can kidney beans
  • 1 1/2 cups canned tomatoes
  • 2 cups water
  • 1 medium onion, chopped
  • 3/4 tsp salt
  • 1/4 tsp garlic salt
  • 1/4 tsp thyme
  • 1/8 tsp pepper
  • 1/2 cup potato, diced

Directions:

  1. Cook sausage in skillet and brown.
  2. Pour off fat.
  3. In a large kettle, combine beans, tomatoes, water, onion, bay leaf, salt, garlic salt, thyme and pepper.
  4. Add sausage.
  5. Simmer, covered for 1 hour.
  6. Add potatoes and green peppers.
  7. Cook covered for 15 minutes or until potatoes are tender.
  8. Remove bay leaf and serve.
