Ingredients:

  1. Heat a very large skillet; melt butter and oil, saute onion and garlic until translucent.
  2. Add sausage meat and spices to the onion mixture and cook on moderate heat for 10-15 minutes, or until the sausage is completely cooked. Drain fat.
  3. Add the cream and reduce by 1/3, this should take about 5 minutes on moderate heat. Stir very frequently to ensure that it doesn’t stick or burn.
  4. Taste, adjust seasoning with pepper and whatever you want to add, pour over hot pasta.
