Salmon And Avocado Omelet

Ingredients:

  • 1 tbsp butter
  • note: i am going to also put homemade salsa on mine. i just love the stuff! also will be adding cheese and more veggies, but this is a good place to start my morning

Directions:

  1. Crack eggs into a bowl, whisk and season with salt and pepper.
  2. Heat a large non-stick pan over medium-high heat.
  3. Add butter and when melted, swirl to coat the entire pan.
  4. Add egg mixture to pan.
  5. Swirl pan and use spatula to loosen around the edges.
  6. Sprinkle salmon and avocados on 1/2 of the omelet.
  7. When almost completely set, fold over in half, tilting pan to help.
  8. Let sit for another 30-60 seconds or so to cook through.
