Rutabaga Casserole

Ingredients:

  • 2 medium rutabagas (about 2 lbs)
  • 1/4 cup half-and-half
  • 2 tsp sugar or 2 tsp corn syrup
  • 1 tsp salt
  • 1/4 tsp ground nutmeg
  • 2 tbsp butter

Directions:

  1. Dice rutabagas and cook by boiling 20 to 25 min.
  2. Or microwave with 1/2 cup water for 15 to 18 minutes.
  3. Mash rutabagas with reserved liquid.
  4. Stir remaining ingredients except butter into rutabagas.
  5. Pour into greased casserole and dot with butter.
  6. Bake 45 to 50 minutes in a 350 degree oven until top is light brown.
