Rum Plum Cake With Rum Glaze

Ingredients:

  • 2 cups flour
  • 2 cups white sugar
  • 1 tsp cinnamon
  • 1/2 tsp clove
  • 1 1/4 tsp baking powder
  • 1 tsp salt
  • 3 eggs
  • 1 cup oil
  • 2 (4 oz) jars plum baby food
  • 4 tbsp dark rum (or to taste)
  • 2 -3 tbsp lemon juice
  • 2 tsp dark rum

Directions:

  1. Set oven to 350 degrees.
  2. Set oven rack to second-lowest position.
  3. Grease and flour a 10-inch Bundt pan.
  4. In a large mixing bowl sift together, flour, sugar, cinnamon, cloves, baking powder and salt.
  5. Add in eggs and oil; beat at mediuum speed until combined.
  6. Add in plum baby food and rum; mix until thoroughly combined.
  7. Transfer to prepared Bundt pan.
  8. Bake for about 40 minutes.
  9. Cool 15 minutes and remove to a plate.
  10. Mix all glaze ingredients for the glaze until smooth.
  11. Pour over WARM cake.
  12. Delicious!
