Ingredients:

Directions:

  1. In a bowl, combine the flour, sugar, dry skim milk, baking powder and the salt. Combine well.
  2. In a large bowl, combine the egg, butter, skim milk, strawberries, lemon juice and rind.
  3. Combine the wet ingredients with the dry until just combined. Place in prepared muffin tins.
  4. Preheat oven to 400.
  5. Bake the muffins for 15 - 20 minutes or until cooked.
