Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1/4 tsp salt
  • 2 eggs
  • 2 medium bananas, mashed
  • 1/3 cup oil

Directions:

  1. Mash bananas with soda.
  2. Beat in eggs and shortening.
  3. Add dry ingredients.
  4. Mix well.
  5. Pour into greased and floured loaf pan.
  6. Bake for 1 hour at 350F Loaf will crack down the middle, test with toothpick for doneness.
