Microwaved Cocoa Muffins

Ingredients:

  • 1 cup flour
  • 2/3 cup sugar
  • 1/4 cup cocoa
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/4 cup oil
  • 1 egg
  • 1 cup raisins
  • 1/2 cup pecans, chopped (optional)

Directions:

  1. Combine flour, sugar, cocoa, baking powder and salt in a med bowl.
  2. Add milk, oil, egg stir just until moistened.
  3. Fold in raisins and nuts.
  4. Fill 6-7 muffin papers 1/2 full.
  5. Place cups in microwave-proof cupcake or muffin tin.
  6. Microwave on high for 2-2 1/2 minutes.
  7. Repeat process with remaining batter.
