Rubbed Salmon With Tomatoes and Basil

Ingredients:

Directions:

  1. Combine tomatoes, basil, vinegar, 1 t. salt, 1/4 t. pepper and garlic in a bowl, set aside.
  2. Combine cumin, remaining salt and pepper to make a rub. Rub into salmon fillets.
  3. Heat oil over medium-high heat in skillet. Cook fish, skin side up for about 4 minutes, then turn, add tomato mixture to pan and cook for an additional 1-2 minutes.
