Roasted Curried Sweet Potatoes

Ingredients:

  • 1 1/2 tbsp unsalted butter
  • 1/2 tsp curry powder
  • 3/4 lb sweet potatoes, peeled and cut into 1-inch pieces (about 2 cups)

Directions:

  1. Preheat oven to 450°F.
  2. In a small saucepan melt butter and stir in curry powder and salt and pepper to taste. In a small baking pan toss potatoes with butter mixture and roast in oven, shaking pan occasionally, until golden and tender, 15 to 20 minutes.
