Roasted Asparagus and Cherries

Ingredients:

Directions:

  1. Whisk liquor, juice, oil and sugar to make marinade.
  2. Wash and pit cherries.
  3. Clean asparagus and trim ends if tough.
  4. Toss marinade over cherries and asparagus.
  5. Let sit for 10 mins or so.
  6. Preheat grill basket on heat source.
  7. Use med-low indirect heat.
  8. Gently place asparagus and cherries in basket using slotted spoon.
  9. Watch for flare-ups.
  10. Grill for 20 mins or so, gently turning. Move to cooler side of grill if cooking too fast. Cherries should sweat and soften wihthout losing shape.
  11. Add personal touches like roasted hazelnuts or goat cheese.
  12. Serve warm.
