Ingredients:

Directions:

  1. In a large bowl combine the beef, onion, garlic, parsley, coriander, mint, salt, pepper, cumin, paprika and cayenne. Cover and let sit for one hour.
  2. Soak 8 wooden skewers in water for one hour (or use metal ones).
  3. In a separate bowl combine cucumber, tomato, bell pepper, chilli, garlic, mint, vinegar, olive oil, salt and pepper tossing to combine. Cover and let marinate at room temperature until ready to serve.
  4. For the minted yoghurt, mix half the yoghurt with the mint, half a teaspoon of salt and some pepper and set aside.
  5. For the spiced yoghurt, mix the chilli, mint, parsley, coriander, garlic and cumin with the remaining yoghurt.
  6. Preheat grill, barbeque or broiler.
  7. Dip hands into a bowl of water. Shape and pack about a 1/4 of the meat mixture into 2 sausage-shapes on 2 skewers. Repeat procedure for remaining meat and skewers.
  8. Grill the keftas on both sides until cooked through, about 3 to 4 minutes per side.
  9. Serve hot with chopped salad and yoghurt dips.
